Old Elk Logo

Old Elk Distillery

Old Elk Distillery is an award-winning, premium craft distiller that develops and crafts exceptional spirits that deliver on taste and experience. Recently, their esteemed Master Distiller, Greg Metze, won the Master Distiller/Master Blender of the Year Award at the 2024 Icons of Whisky Awards. One of the things that sets Old Elk apart from the herd is their "Slow Cut™ Method". To proof alcohol, water is added until the liquid reaches a desired strength. However, this creates a heat liberating reaction, and when you add hundreds of gallons of water in a day or two, it ends up boiling off many of the lighter, finer flavors. At Old Elk, things are done differently - instead of a day, they spend weeks adding small increments of water to keep the liquid cool and save the delicate flavors that their team works so hard to produce during mashing, fermentation, distillation, and maturation. It’s why you can taste the quality in every sip.

Gnebriated Gnome Distillery

Gnebriated Gnome Distilling is known as "Fort Collins' oldest new distillery". This unique distillery prides themselves on their goofy fantasy names, calm relaxed atmosphere, great drinks, wonderful food, and, of course, the bright shiny tanks and still. Gnebriated Gnome is owned and operated by a small family and friend circle who have been together for 20 years or more. Jared and Todd served in the Army together, went to war together, and have raised their families together. Jared is the distiller and mastermind behind the rum. Todd is the whiskey drinker and has pushed Jared to create at least a couple whiskeys and hopes to expand into beer in the future. The rest of the team is family to either of them, mothers, spouses, and in-laws. They focus on their rum, but you are sure to find a couple delicious whiskeys on the menu.

seed and spirit logo

Seed & Spirit Distilling

Seed & Spirit Distilling's name comes from their belief that being a truly handcrafted distillery requires involvement in every process that goes into producing spirits, from "seed to spirit". That is why they are growing their own grain or locally sourcing what they can't grow, in-house malting those very grains, fermenting, distilling, aging, and bottling every drop they sell, right here in Fort Collins. They are joining those producing 100% in-house products and aspiring to take it further through various aspects of the production process in their local Colorado distillery. Taste for yourself what makes Seed & Spirit Distilling the new Colorado Standard of Spirits.
